Ingredients
- 2 large spaghetti squash
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 1 jar (16 oz) Alfredo sauce
- 1 cup shredded mozzarella cheese
Instructions
- Preheat your oven to 400°F (204°C).
- Cut spaghetti squash in half lengthwise, scoop out seeds, drizzle with olive oil, and place cut-side down on a baking sheet.
- On the same baking sheet, add broccoli florets and drizzle with remaining olive oil.
- Roast for about 30 minutes until squash is fork-tender and broccoli is lightly browned.
- Scrape strands from the roasted spaghetti squash into a large bowl; add roasted broccoli, Alfredo sauce, and half of the mozzarella cheese. Mix well.
- Transfer mixture into a casserole dish, top with remaining mozzarella cheese, and broil until melted and golden brown.
