Ingredients
- 8 oz pasta
- 4 cups broccoli florets
- 1/2 cup extra virgin olive oil
- 1/4 tsp salt
- 1/2 tsp fresh cracked black pepper
- 8 oz brick of feta cheese
- 1 tbsp lemon juice
- 2 tbsp lemon zest
- 2 tbsp fresh chopped basil
Instructions
- Preheat your oven to 400°F (200°C). Cut broccoli into quarters and place in a baking dish.
- Drizzle olive oil over the broccoli, season with salt and pepper, then create space in the center for the feta. Drizzle more olive oil on top of the feta.
- Bake for about 35 minutes until golden and tender.
- While baking, boil water and cook pasta until al dente; reserve 1/2 cup of pasta water before draining.
- Mix baked broccoli and feta together in the baking dish, adding reserved pasta water gradually to reach desired creaminess.
- Stir in cooked pasta, lemon juice, lemon zest, and basil before serving.
