- ¼ cup + 2 tablespoons whole wheat panko breadcrumbs

- 1 egg white
- 2 garlic cloves
- ¾ teaspoon salt
- ¼ teaspoon ground pepper
- ½ teaspoon paprika
- ½ teaspoon ground oregano
- ¾ California avocado
- 3 tablespoons fat-free plain Greek yogurt
- ½ lime (juiced)
- 5 tablespoons water
- 2 tablespoons minced cilantro
- ¼ – ½ teaspoon chipotle chili powder
- ¼ teaspoon salt (or to taste)
- ¼ teaspoon ground pepper
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a food processor, combine the salmon, grated onion, breadcrumbs, cilantro, egg white, minced garlic, salt, pepper, paprika, and oregano. Pulse until blended but slightly chunky.
- Shape the mixture into 1-2 inch meatballs and place them on the prepared baking sheet.
- Bake for about 18 minutes or until golden brown.
- While baking, mash the avocado in a bowl and mix in Greek yogurt, garlic, lime juice, water, cilantro, chipotle chili powder, salt, and pepper until smooth.
