  • ¼ cup granulated sugar (optional)
  • 6 tbsp unsalted butter, melted
  • 2 ripe bananas, mashed
  • 24 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • ½ cup sour cream or Greek yogurt
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, optional sugar, and melted butter. Press into the bottom of a springform pan. Bake for 8–10 minutes until set; let cool.
  2. Beat softened cream cheese until smooth. Gradually mix in sugar, then add eggs one at a time. Stir in sour cream or yogurt, vanilla extract, and mashed bananas until just blended.
  3. Pour filling over the cooled crust. Place the pan in a larger baking dish filled with water (water bath) to bake for 60–70 minutes until edges are set but center is slightly jiggly. Turn off oven; cool inside for an hour.
  4. Refrigerate for at least 4 hours or overnight before serving.
