  • 1 pound boneless, skinless chicken breasts (diced)

  • 1 teaspoon ginger (minced)
  • 2 tablespoons soy sauce
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sesame oil
  • 1 large egg (beaten)

Instructions

  1. Season diced chicken with salt and pepper. In a skillet or wok, heat vegetable oil over medium-high heat. Cook chicken until browned (5-7 minutes). Set aside.
  2. Sauté garlic and ginger in the same skillet for 30 seconds; add peas and carrots, stir-frying for another 2-3 minutes.
  3. Push veggies aside and scramble the beaten egg until fully cooked; mix with other ingredients.
  4. Add rice and cooked chicken back into the skillet. Pour over soy sauce, sweet chili sauce, and sesame oil; stir until heated through (3-5 minutes).
