  • 1 tablespoon brown sugar
  • 2 teaspoons kosher salt
  • 2 1/2 teaspoons active dry yeast
  • 4 1/2 cups all-purpose flour
  • 1/4 cup unsalted butter (melted)
  • 2/3 cup baking soda
  • Pretzel salt (or kosher salt for sprinkling)

Instructions

  1. In a mixing bowl, combine warm water, brown sugar, and kosher salt. Sprinkle over the yeast and let it sit until bubbly (about 10 minutes).
  2. Mix in flour and melted butter using a dough hook mixer on medium speed until the dough is smooth (around 4 minutes).
  3. Form the dough into a ball, coat it in oil, cover with plastic wrap, and let it rise in a warm place until doubled in size (about 1 hour).
  4. Preheat oven to 450°F. Boil water with baking soda in a large pot.
  5. Divide risen dough into 8 portions; roll each into long snakes and shape into pretzels.
  6. Boil each pretzel for about 30 seconds, then transfer to baking sheets.
  7. Brush with egg yolk mixed with water; sprinkle with salt before baking for 12-14 minutes until golden brown.
