  • 12 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup milk
  • 2 tablespoons butter, melted
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange bacon slices in a single layer. Bake for 15-20 minutes until crispy. Drain on paper towels and chop.
  2. In a bowl, whisk together eggs, milk, salt, and pepper. Melt butter in a non-stick skillet over medium heat; add egg mixture and cook until set but slightly moist. Stir in cheeses.
  3. Preheat oven to 350°F (175°C). Slice Hawaiian rolls horizontally, place the bottom half in a baking dish. Spread egg mixture over the rolls, sprinkle bacon on top, then add the top half.
  4. Mix melted butter with Dijon mustard and garlic powder; brush over the rolls. Cover with foil and bake for 15 minutes; uncover and bake an additional 5-10 minutes until golden.
