  2. Scrub potatoes, poke holes with a fork, and bake directly on the oven rack for 45-60 minutes until tender.

  4. Once cooled slightly, cut potatoes in half lengthwise and scoop out the flesh into a bowl.
  5. Mix potato flesh with butter, sour cream, half of the cheddar cheese, and chopped broccoli until creamy. Season with salt and pepper.
  6. Spoon mixture back into potato skins, top with remaining cheddar cheese and green onions.
