  • 2 tbsp olive oil
  • 1 lb pasta
  • salt
  • black pepper
  • dried thyme

Instructions

  1. Preheat the oven to 450°F and line a baking sheet with parchment paper.
  2. Spread frozen butternut squash, chopped tomatoes, and sliced onion on the baking sheet.
  3. Drizzle with olive oil and season with salt, pepper, and thyme; toss to coat evenly.
  4. Bake for about 20 minutes until tender and caramelized.
  5. While baking, cook pasta according to package instructions; reserve 1/3 cup of pasta water before draining.
  6. Transfer baked vegetables to a blender; add reserved pasta water and blend until smooth.
  7. Combine the sauce with cooked pasta and serve immediately.
