  • 2 medium Yellow onions (thinly sliced)
  • 1 teaspoon Kosher salt
  • 1 teaspoon Ground black pepper
  • 2 tablespoons Unsalted butter
  • 1 teaspoon Fresh thyme
  • 1/4 cup Dry white wine
  • 1 tablespoon Balsamic vinegar
  • 6 ounces Gruyère cheese (shredded)
  • 1 teaspoon Extra black pepper

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced onions and cook for 10-15 minutes until soft. Season with salt and pepper.
  2. Stir in unsalted butter and continue cooking until onions are deeply caramelized, about 10 more minutes. Add fresh thyme.
  3. Deglaze the pan with dry white wine, scraping up brown bits, and simmer for 2 minutes.
  4. Incorporate potato gnocchi and balsamic vinegar into the skillet, mixing gently to coat. Top with shredded Gruyère cheese.
  5. Remove from heat once the cheese has melted, serve warm garnished with extra black pepper.
