  • 4 cups chicken broth
  • 1 medium onion
  • 3 cloves garlic
  • 1 red bell pepper
  • 1 jalapeño
  • 2 tablespoons Cajun seasoning
  • 4 ounces cream cheese
  • 5 cups heavy cream
  • Fresh cilantro for garnish

Instructions

  1. Season chicken with salt, pepper, and Cajun seasoning; set aside.
  2. In a Dutch oven, heat olive oil over medium-high heat; sear chicken until golden brown on both sides (about 5 minutes each). Remove and shred.
  3. Sauté onion, garlic, bell pepper, and jalapeño in the same pot until soft (about 5 minutes).
  4. Add chicken broth, white beans, and remaining Cajun seasoning; stir to combine.
  5. Return shredded chicken to the pot; simmer for 20-30 minutes on low heat.
