Ingredients
- 9 oz Digestive Biscuits or Graham Crackers
- 1 Stick Butter (8 Tbsp)
- 2 Cups Heavy Whipping Cream
- 9 oz Cream Cheese
- 1/2 Cup Powdered Sugar
- 1–2 tsp Peppermint Essence
- 5 Candy Canes (crushed)
Instructions
- Prepare the crust by crushing biscuits into fine crumbs and mixing with melted butter. Press into an 8” springform pan and refrigerate.
- For the filling, whip heavy cream to soft peaks and set aside. Beat cream cheese with powdered sugar until fluffy, then fold in whipped cream, peppermint essence, and crushed candy canes.
- Pour filling onto the crust, smoothing the top with a spatula. Refrigerate for at least 4 hours or overnight.
- Once set, remove from the pan, slice, and serve topped with whipped cream and extra crushed candy canes.
