Instructions
- Combine flour, sugar, cinnamon, and salt in a bowl. Add butter, egg yolk, and white wine; mix until dough forms.
- Knead dough for about 5 minutes on a floured surface. Wrap in plastic wrap and let rest for 30 minutes.
- Roll out dough to about 1/8 inch thick and cut into 3-inch circles.
- Heat oil in a deep skillet to 350°F (175°C). Wrap dough circles around cannoli tubes and fry until golden brown.
- Mix ricotta, powdered sugar, vanilla, and cinnamon until smooth. Fold in optional chocolate chips.
- Once shells cool, fill with ricotta mixture using a piping bag or spoon.
