  • 3 ripe bananas
  • ½ cup brown sugar
  • â…“ cup dark rum
  • 3 tbsp butter
  • 1 tsp cornstarch (optional, for thickening)

Instructions

  1. Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter; press into a springform pan. Bake for 8 minutes.
  2. Lower oven to 325°F (163°C). Beat cream cheese until smooth; add sugar, eggs one at a time, then sour cream and vanilla. Pour over crust and bake for 55-65 minutes until set at edges.
  3. Cool in the oven for 1 hour; refrigerate for at least 4 hours.
  4. In a skillet, melt butter and brown sugar; add banana slices until golden brown.
  5. For the glaze, melt butter and brown sugar in a saucepan; stir in dark rum until thickened.
  6. Top cheesecake with caramelized bananas and warm rum glaze before serving.
