Ingredients

  • 1 large tart green apple
  • 10 ounces matchstick carrots (about 3 cups)
  • 1/3 cup mayonnaise
  • 1/3 cup plain yogurt
  • 2 tablespoons honey
  • 2 teaspoons rice wine vinegar
  • Salt & freshly ground black pepper to taste
  • Optional: 3/4 cup crumbled feta cheese
  • Optional: 1/2 cup dried sweetened cranberries

Instructions

  1. Core and slice both apples into thin matchsticks, then toss them in a large bowl with lemon juice.
  2. Add the matchstick carrots to the apple mixture and stir gently.
  3. In a small bowl, whisk together mayonnaise, yogurt, honey, vinegar, salt, and pepper until smooth.
