Ingredients
- Unsalted butter

Instructions
- Melt 18 tablespoons of unsalted butter in a frying pan until it turns amber. Let cool.
- In a bowl, sift together 2 2/3 cups flour, 1 tablespoon cornstarch, 1 teaspoon baking soda, 1 teaspoon salt, and spices (2 teaspoons cinnamon, 1 teaspoon ginger, 1/4 teaspoon nutmeg, 1/2 teaspoon cardamom, 1/4 teaspoon cloves).
- Mix cooled brown butter with 1 1/2 cups granulated sugar, 2 eggs, and 1 teaspoon vanilla until combined.
- Fold dry ingredients into the wet mixture using a rubber spatula until just combined.
- Preheat oven to 350°F and line cookie sheets with parchment paper.
- Roll dough into balls and coat in a mixture of sugar and spices before placing on sheets.
- Bake for 13–15 minutes until lightly golden around the edges. Cool on the pan for 6 minutes before transferring to a wire rack.
