  • 1 cup freshly shredded pepper jack cheese
  • 3 medium jalapeños (seeded and finely diced)
  • 1 teaspoon garlic (minced)
  • ½ cup flour
  • ¼ teaspoon Kosher salt
  • ¼ teaspoon pepper
  • 2 large eggs (room temperature)
  • 2 teaspoons water
  • 1 cup plain bread crumbs
  • ½ teaspoon garlic powder
  • ½ teaspoon cayenne pepper
  • vegetable or canola oil

Instructions

  1. In a mixing bowl, combine both cheeses with diced jalapeños and minced garlic until well mixed.
  2. In another bowl, whisk flour with Kosher salt and pepper. In a separate small bowl, beat eggs with water until frothy.
  3. Form the cheese mixture into compact bite-sized balls.
  4. Roll each ball in the flour mixture, dip in egg wash, and coat with bread crumbs mixed with garlic powder and cayenne pepper.
  5. Fry in hot oil for about 3 minutes or until golden brown. Drain on paper towels and serve warm.
