  • 4 cups all-purpose flour
  • 1½ cups cold unsalted butter (cubed)
  • 6 to 7 cups sliced apples (peeled and cored)
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 tablespoons lemon juice
  • 2 cups powdered sugar (for glaze)

Instructions

  1. In a large bowl, whisk together flour, sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  2. In a separate bowl, whisk eggs, ice water, and lemon juice; combine with flour mixture until dough forms.
  3. Divide dough into two pieces; flatten into rectangles, wrap in plastic, and chill for at least 30 minutes.
  4. Toss sliced apples with sugars, cornstarch, cinnamon, nutmeg, salt, lemon juice, and vanilla extract.
  5. Preheat oven to 375°F (190°C). Roll out larger dough piece to fit a greased 9×13-inch pan.
  6. Spread apple filling over bottom crust; roll out second piece of dough for the top crust with vents cut for steam.
  7. Bake for 45 to 50 minutes or until golden brown. Cool completely before glazing.
