Ingredients

  • 4 cups cooked sushi rice
  • 1/2 pound boneless skinless chicken (drumsticks recommended)
  • 2 teaspoons soy sauce
  • 1 tablespoon sake (or water)
  • 1 tablespoon mirin
  • 1 tablespoon brown sugar
  • 1 sheet nori (cut into small rectangles)

Instructions

  1. Cook the sushi rice according to package instructions. Once cooked, mix with salt and furikake.
  2. Cut the chicken into small pieces, marinate with soy sauce, sake, baking soda, cornstarch, mirin, brown sugar, oil, and minced garlic for 30 minutes.
  3. Heat oil in a nonstick pan over medium-high heat. Cook the marinated chicken until fully cooked, about 2-3 minutes.
  4. Shape the onigiri by wetting your hands, scooping rice into your palms, adding filling, covering with more rice, and forming triangles.
  5. Wrap each triangle with nori before serving.
