  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • Salt, pepper, and 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch casserole dish.
  2. In a large skillet over medium heat, add olive oil and sauté the onion and mushrooms for about 5-7 minutes until softened.
  3. Stir in minced garlic and fresh spinach; cook until the spinach wilts. Season with salt, pepper, and Italian seasoning.
  4. Layer the cooked chicken evenly at the bottom of the casserole dish.
  5. Top with the sautéed vegetable mixture.
  6. Pour heavy cream over the layers, then sprinkle with mozzarella and parmesan cheese.
  7. Bake uncovered for 20-25 minutes until the cheese is melted and golden brown.
