Instructions
- Heat chickpeas in a medium saucepan over medium heat for about 10 minutes. Drain well.
- In a large mixing bowl, mash the drained chickpeas to your desired consistency using a potato masher or fork.
- Add minced celery, onion, parsley, mayonnaise, Dijon mustard, and salt to the mashed chickpeas. Stir until well combined.
- Chill the mixture in the refrigerator for at least one hour before serving.
- Serve on bread or in lettuce cups with additional toppings as desired.
