Ingredients
- 3 cups puffed rice cereal
- 1 ½ cups mini marshmallows (or 1 cup mini marshmallows + ¼ cup marshmallow fluff)
- 4 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 2 cups white chocolate chips or white chocolate candy melts
- 1 tablespoon coconut oil (optional)
- ½ cup red, green, and white nonpareils for decoration
Instructions
- In a large saucepan, melt butter over low heat. Add marshmallows and stir until fully melted and smooth. Remove from heat and mix in vanilla extract. Fold in the puffed rice cereal until evenly coated.
- Allow the mixture to cool slightly before greasing your hands with butter. Roll into bite-sized balls (1 to 1.5 inches) and place on a parchment-lined baking sheet.
- Melt white chocolate in a microwave-safe bowl in 20–30 second intervals. Stir in coconut oil if desired for smoother consistency.
- Dip each ball into the melted chocolate, letting excess drip off before returning to the tray. Immediately sprinkle with nonpareils.
- Let set at room temperature or refrigerate for faster cooling before serving.
