  • 2 lbs boneless skinless chicken breasts or thighs
  • 1 cup sun-dried tomatoes, chopped
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1½ cups uncooked orzo pasta
  • 1 cup heavy cream or cream cheese
  • ¾ cup grated Parmesan cheese
  • Spinach (to taste)
  • Italian seasoning, salt, and pepper

Instructions

  1. Place chicken in the crockpot. Add onion, garlic, sun-dried tomatoes, and chicken broth. Season with Italian seasoning, salt, and pepper.
  2. Cook on LOW for 5–6 hours or HIGH for 2.5–3 hours until the chicken is tender.
  3. Shred the chicken directly in the crockpot using two forks.
  4. Stir in heavy cream (or cream cheese) and add uncooked orzo pasta. Cook on HIGH for another 20–30 minutes until the orzo is tender.
  5. Incorporate fresh spinach and Parmesan cheese until the spinach wilts and everything is creamy.
  6. Adjust seasoning if needed and serve warm.
