  • 2 cups yogurt
  • 1 cup tofu
  • 2 garlic cloves
  • 2 tbsp red wine vinegar
  • 1/4 cup dill
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp lemon juice

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Rinse and drain chickpeas; chop red bell pepper, red onion, and potatoes into uniform pieces.
  3. In a mixing bowl, combine chickpeas and vegetables with olive oil and spices. Toss until well coated.
  4. Spread mixture evenly on a baking sheet; roast for 30–40 minutes, stirring halfway through until golden brown.
  5. Meanwhile, prepare toppings by chopping cucumber and blending tofu with garlic, vinegar, dill, salt, pepper, and lemon juice until smooth.
  6. Assemble bowls with roasted vegetables, cucumber slices, tofu dressing, and garnish with cashews before serving.
