  • 2 tablespoons Olive Oil
  • 1 large Onion
  • 3 cloves Garlic
  • 1 teaspoon Turmeric
  • 6 cups Vegetable Broth
  • 1 cup Lentils
  • 1 can Chickpeas
  • 1 cup Navy Beans
  • 1 cup Kidney Beans
  • 8 ounces Persian Noodles/Linguine
  • 2 cups Spinach
  • 1 cup Cilantro
  • 1 cup Parsley
  • 1 cup Dill
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 cup Sour Cream/Yogurt
  • 1 cup Fried Onions

Instructions

  1. Sauté chopped onion in olive oil until translucent, then add minced garlic and turmeric.
  2. Pour in vegetable broth along with lentils, chickpeas, navy beans, and kidney beans; bring to boil then simmer for 20 minutes.
  3. Add noodles to the pot and cook until al dente.
  4. Stir in fresh spinach, cilantro, parsley, and dill; season with salt and pepper.
  5. Serve hot topped with sour cream or yogurt and fried onions.
