- 4 boneless, skinless chicken breasts
- 4 oz Brie cheese, sliced
- 1/2 cup cranberry sauce (homemade or store-bought)
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Slice a pocket in each chicken breast without cutting all the way through.
- Stuff each pocket with 1 oz of Brie and about 2 tablespoons of cranberry sauce.
- Secure the openings with toothpicks or kitchen twine.
- Season the outside of each breast with garlic powder, thyme, salt, and pepper.
- Heat olive oil in an oven-safe skillet and sear the chicken for 2-3 minutes on each side until golden brown.
- Transfer the skillet to the oven and bake for 20-25 minutes until the internal temperature reaches 165°F (74°C).
- Let rest for a few minutes before serving.
