- 1/2 cup whole cream or coconut cream
- 3 cups packed baby spinach
- 1/2 teaspoon sea salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons lemon juice
- optional – 1 tablespoon chopped fresh dill
Instructions
- In a large skillet, heat olive oil over medium-high heat. Sauté sliced shallots until translucent (3-5 minutes).
- Add minced garlic and cook for 30 seconds until fragrant.
- Stir in butter beans, vegetable stock, and miso paste; simmer for about 10 minutes.
- Add cream and simmer for an additional 5 minutes.
