  • 2 large red bell peppers, roasted and peeled
  • 1 cup heavy cream
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh basil for garnish
  • Burrata cheese for topping

Instructions

  1. Preheat the oven to 400°F (200°C) and roast the red bell peppers on a baking sheet for 25-30 minutes until charred. Let cool before peeling.
  2. Cook pasta in salted boiling water until al dente; drain and set aside.
  3. Blend roasted peppers, heavy cream, garlic, salt, pepper, and optional red pepper flakes until smooth.
  4. Heat olive oil in a skillet over medium heat; add the sauce and cook for about 5 minutes.
  5. Toss cooked pasta in the skillet with the sauce until well coated.
