Ingredients
- 2 tablespoons olive oil
- 1 pound ground Italian sausage (or vegan sausage)
- 1 large white onion, diced
- 6 cloves garlic, minced
- 4 cups vegetable broth
- 5 fresh sage leaves
- 2 carrots, thinly sliced
- 1 1/2 pounds sweet potato, diced
- 1 15-ounce can white beans, rinsed and drained
- 1 15-ounce can full-fat coconut milk
- 2 large handfuls fresh kale, chopped
- Salt and pepper to taste
Instructions
- In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Add the sausage and brown it; then transfer to a plate.
- In the same pot, add the remaining olive oil and sauté the onion for about 5 minutes until softened. Add garlic and cook for an additional minute.
- Stir in the vegetable broth, sage leaves, carrots, sweet potatoes, smoked paprika, white beans, and half of the browned sausage. Simmer for about 15 minutes until sweet potatoes are tender.
- Add coconut milk and kale; cook for an additional couple of minutes until kale wilts. Remove sage leaves.
- Season with salt and pepper to taste before serving warm with additional sausage and toppings if desired.
