- 80 g mozzarella cheese (grated)
- 2 large eggs
- 150 g baby spinach
- 200 g champignon mushrooms (sliced)
- 100 g mozzarella fior di latte (torn into pieces)
- 30 g Parmesan cheese (grated)
Instructions
- Preheat your oven to 180°C (350°F). In a mixing bowl, combine grated potatoes, salt, pepper, oregano, eggs, parsley, and mozzarella cheese. Mix until well combined.
- Grease your baking dish with olive oil and press the potato mixture evenly into the bottom and sides to form the crust. Bake for about 25 minutes until golden brown.
- In a frying pan over medium heat, add olive oil and sauté green onions and garlic until fragrant. Add sliced mushrooms and cook until soft. Stir in spinach until just wilted; season with salt, pepper, and oregano.
- Once cooled slightly, layer the mushroom-spinach mixture over the crust. Top with mozzarella fior di latte and Parmesan before returning it to the oven.
- Bake for an additional 30 minutes until the cheese is melted and bubbly. Allow to cool before slicing.
