  • 600 g potatoes (peeled and grated)
  • 80 g mozzarella cheese (grated)
  • 2 large eggs
  • 150 g baby spinach
  • 200 g champignon mushrooms (sliced)
  • 100 g mozzarella fior di latte (torn into pieces)
  • 30 g Parmesan cheese (grated)

Instructions

  1. Preheat your oven to 180°C (350°F). In a mixing bowl, combine grated potatoes, salt, pepper, oregano, eggs, parsley, and mozzarella cheese. Mix until well combined.
  2. Grease your baking dish with olive oil and press the potato mixture evenly into the bottom and sides to form the crust. Bake for about 25 minutes until golden brown.
  3. In a frying pan over medium heat, add olive oil and sauté green onions and garlic until fragrant. Add sliced mushrooms and cook until soft. Stir in spinach until just wilted; season with salt, pepper, and oregano.
  4. Once cooled slightly, layer the mushroom-spinach mixture over the crust. Top with mozzarella fior di latte and Parmesan before returning it to the oven.
  5. Bake for an additional 30 minutes until the cheese is melted and bubbly. Allow to cool before slicing.
