  • 1 1/2 lbs boneless skinless chicken breasts or thighs
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth
  • 1 cup uncooked small pasta (ditalini or elbow macaroni)
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish

Instructions

  1. In your slow cooker, combine chicken, onion, garlic, crushed tomatoes, broth, basil, oregano, red pepper flakes (if using), salt, and pepper.
  2. Cover and cook on low for 6–7 hours or high for 3–4 hours until chicken is cooked through.
  3. Remove chicken and shred it with two forks before returning it to the pot.
  4. Stir in uncooked pasta and cook on high for an additional 15–20 minutes until pasta is al dente.
  5. Add grated Parmesan and shredded mozzarella; stir until melted and creamy.
  6. Serve hot, garnished with fresh basil or parsley.
