- 2 garlic cloves
- 2 ripe peaches
- 1 cup halved and pitted cherries
- 1 handful fresh cilantro (chopped)
- 1 jalapeño pepper (chopped)
- 1/2 small red onion (chopped)
- Juice and zest of 1.5 limes
- Salt to taste
Instructions
- Prepare all ingredients: chop garlic, pit and dice peaches, halve cherries, chop cilantro, remove seeds from jalapeño before chopping, and finely chop red onion.
- In a mixing bowl, combine garlic, peaches, cherries, cilantro, jalapeño pepper, and red onion.
- Zest one lime over the mixture and squeeze in juice from both limes. Season with salt to taste.
- Mix well until combined. Chill in the refrigerator for at least 30 minutes before serving.
