  • 1 lb Ground chicken
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • Salt and black pepper to taste
  • 8 Small tortillas
  • 1 cup Shredded mozzarella or Monterey Jack cheese
  • 1 cup Shredded cabbage
  • ½ cup Chopped dill pickles
  • 2 tbsp Pickle brine
  • ½ cup Cottage cheese
  • 1 tsp Ranch seasoning
  • Lemon juice from ½ lemon

Instructions

  1. In a bowl, mix ground chicken with garlic powder, paprika, salt, and pepper.
  2. Form the mixture into eight equal balls.
  3. Heat a skillet over medium heat and place a tortilla in it. Add cheese and one chicken ball on top.
  4. Use a spatula to flatten the chicken ball gently; cook until golden brown (about 2 minutes).
  5. Flip the taco and cook the other side for an additional 3–4 minutes.
  6. In a separate bowl, combine shredded cabbage, dill pickles, and pickle brine for slaw.
  7. Blend cottage cheese with ranch seasoning and lemon juice until smooth for dressing.
  8. Assemble tacos by topping with pickle slaw and ranch drizzle.
