Ingredients
- 1 lb Ground chicken
- 1 tsp Garlic powder
- 1 tsp Paprika
- Salt and black pepper to taste
- 8 Small tortillas
- 1 cup Shredded mozzarella or Monterey Jack cheese
- 1 cup Shredded cabbage
- ½ cup Chopped dill pickles
- 2 tbsp Pickle brine
- ½ cup Cottage cheese
- 1 tsp Ranch seasoning
- Lemon juice from ½ lemon
Instructions
- In a bowl, mix ground chicken with garlic powder, paprika, salt, and pepper.
- Form the mixture into eight equal balls.
- Heat a skillet over medium heat and place a tortilla in it. Add cheese and one chicken ball on top.
- Use a spatula to flatten the chicken ball gently; cook until golden brown (about 2 minutes).
- Flip the taco and cook the other side for an additional 3–4 minutes.
- In a separate bowl, combine shredded cabbage, dill pickles, and pickle brine for slaw.
- Blend cottage cheese with ranch seasoning and lemon juice until smooth for dressing.
- Assemble tacos by topping with pickle slaw and ranch drizzle.
