  • 1 cup shredded mozzarella or Monterey Jack cheese
  • 8 small tortillas
  • 1 cup shredded cabbage
  • ½ cup chopped dill pickles
  • ½ cup cottage cheese (for ranch drizzle)
  • Ranch seasoning
  • Garlic powder
  • Paprika
  • Salt and black pepper
  • Pickle brine
  • Lemon juice from ½ lemon

Instructions

  1. In a mixing bowl, combine ground chicken with garlic powder, paprika, salt, and pepper. Form into eight equal balls.
  2. Heat a skillet over medium heat. Place one tortilla in the skillet and sprinkle cheese on top. Add one chicken ball.

  4. Flip the taco to cook the chicken side for another 3-4 minutes until fully cooked.
