Ingredients
- 1 lb salmon, cubed
- 1 ½ cup uncooked sushi rice
- 3 large nori sheets

- 1 tbsp Kewpie mayo
- 1 tbsp sriracha
- 1 tbsp rice vinegar
- Furikake and green onion for garnish
Instructions
- Cook the sushi rice according to package instructions until fluffy.
- Mix rice vinegar and sugar in a microwave-safe bowl; heat until sugar dissolves. Combine with cooked rice.
- Preheat oven to 400°F.
- In a mixing bowl, combine salmon, soy sauce, Kewpie mayo, sriracha, and sesame oil.
- Cut nori sheets into squares; place in greased muffin tin.
- Press sushi rice into nori cups; top with salmon mixture.
- Bake for about 15 minutes until salmon is cooked through.
