  • 6 English muffins, split and cut into 1-inch pieces
  • 8 large eggs
  • 2 cups whole milk
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika
  • 3 teaspoons chopped fresh parsley (for garnish)
  • ½ cup hollandaise sauce (store-bought or homemade)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Layer half of the diced Canadian bacon and half of the English muffin pieces in the dish. Repeat with remaining ingredients.
  3. In a large bowl, whisk together eggs, milk, onion powder, salt, garlic powder, black pepper, and paprika.
  4. Pour egg mixture over layered ingredients. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
  5. Remove wrap and sprinkle with paprika before baking for about 35-40 minutes until eggs are set.
  6. Warm hollandaise sauce according to instructions and drizzle over casserole before serving.
