  • 4 bone-in, skin-on chicken thighs
  • 1 cup buttermilk
  • 1 teaspoon hot sauce (optional)
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Cooking oil spray or olive oil

Instructions

  1. Marinate the chicken thighs in buttermilk (and hot sauce if desired) for at least 2 hours or overnight.
  2. Preheat your oven to 425°F (220°C) and line a baking sheet with foil, placing a wire rack on top.
  3. In a bowl, mix flour with garlic powder, onion powder, smoked paprika, dried thyme, salt, and black pepper.
  4. Remove chicken from the marinade and coat thoroughly in the seasoned flour mixture.
  5. Arrange the coated thighs on the wire rack, skin side up, and lightly spray with oil.
  6. Bake for 35-40 minutes until golden brown and the internal temperature reaches 165°F (74°C).
