Ingredients
- 4 green or slightly yellow plantains
- 4 cloves garlic, minced
- 2–3 tbsp olive oil or butter
- 1/4 cup pork cracklings (optional)
- Salt and pepper to taste
- 1 lb medium shrimp, peeled and deveined
- Additional garlic for the shrimp
Instructions
- Peel and cut the plantains into 1–2 inch pieces. Boil them in salted water for about 10–15 minutes until tender.
- Using a mortar and pestle, mash the boiled plantains with minced garlic, olive oil, and optional pork cracklings. Season with salt and pepper.
- In a skillet over medium heat, melt butter or heat olive oil. Sauté minced garlic until fragrant, then add shrimp seasoned with salt and pepper. Cook until shrimp are pink and opaque (about 3–4 minutes per side).
- Mold the mofongo mixture onto plates and top generously with garlic shrimp. Serve immediately.
