  • 1/2 cup gluten-free all-purpose flour
  • 1 tsp ground coriander
  • 3/4 tsp paprika
  • 3/4 tsp ground cumin
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 6 tbsp fresh lemon juice
  • 5 tbsp extra virgin olive oil
  • 2 tbsp butter
  • 6 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix flour, coriander, paprika, cumin, salt, black pepper, and red pepper flakes.
  3. Pat the cod dry and dredge each fillet in the flour mixture.
  4. In a skillet, melt butter with olive oil over medium heat; sauté garlic until fragrant.
  5. Place the cod in a baking dish; drizzle with remaining olive oil and lemon juice; pour sautéed garlic on top.
  6. Bake for about 10 minutes or until the fish flakes easily with a fork.
