Ingredients
- 1 Strawberry Cake Mix (15 oz)
- 1 ½ cups Guava Nectar or Juice
- 3 large eggs
- â…“ cup Coconut Oil
- 10 oz Cream Cheese
- ½ cup granulated sugar
- 8 oz Cool Whip
- 2 ½ cups Guava Nectar for glaze
- ½ cup granulated sugar for glaze
- 4 tbsp Cornstarch
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a bowl, combine the strawberry cake mix, guava nectar, eggs, and coconut oil. Mix on medium speed for 2 minutes.
- Pour batter into the prepared pan and bake for about 25 minutes or until a toothpick comes out clean. Allow cooling.
- Beat together cream cheese, sugar, and vanilla until smooth; fold in Cool Whip.
- Spread the cream cheese mixture over the cooled cake.
- For the glaze, combine guava nectar, sugar, cornstarch mixed with water in a saucepan over medium heat until thickened; cool slightly before pouring over the cream cheese layer.
- Refrigerate for at least an hour before serving.
