  • 4 bell peppers (any color)
  • 1 tbsp olive oil
  • 4 cups fresh spinach
  • 1 tub (15 oz) ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • ½ cup sliced green onions
  • ½ cup chopped fresh basil
  • ½ cup chopped flat-leaf parsley
  • 2 large eggs
  • ½ cup breadcrumbs

Instructions

  1. Preheat oven to 400°F (204°C). Halve bell peppers lengthwise and remove seeds. Arrange cut side up on a parchment-lined baking sheet and brush with olive oil. Bake for about 20 minutes until softened.
  2. Microwave spinach until wilted, then chop it. In a bowl, combine spinach, ricotta, mozzarella, parmesan, green onions, basil, parsley, eggs, rosemary, thyme, fennel seeds, salt, and pepper.
  3. Fill each pepper half with the ricotta mixture evenly.
  4. Mix breadcrumbs with oil in a small bowl and sprinkle over the stuffed peppers.
  5. Bake at 350°F (176°C) for an additional 30 minutes or until golden brown on top.
