  • 1 large cucumber (diced)
  • 1.5 cups tomatoes (halved or quartered)
  • 1 yellow bell pepper (diced)
  • 1/4 cup red onion (finely diced)
  • 1/2 cup spinach (chopped)
  • 1.5 cups Good Culture cottage cheese
  • 1 lemon (juiced)
  • 1/2 cup Italian dressing
  • Oregano, salt, and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, prepare your vegetables: dice cucumber, halve tomatoes, dice bell pepper, chop onion, and cut spinach.
