  • 2 cups orzo pasta
  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach, chopped
  • 1/2 cup Kalamata olives, sliced
  • 1/2 cup feta cheese, crumbled
  • Juice of 1 lemon
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. Cook orzo in boiling salted water until al dente (8–10 minutes). Drain and set aside.
  2. Season chicken with salt, pepper, oregano, and basil. In a skillet, heat olive oil over medium-high heat and cook chicken until golden brown (6–7 minutes per side). Let rest before slicing.
  3. In the same skillet, sauté onion until translucent (3–4 minutes), then add garlic for another minute.
  4. Stir in cherry tomatoes and spinach; cook until spinach wilts.
  5. Pour in chicken broth and bring to simmer for about 5 minutes.
  6. Combine cooked orzo and sliced chicken with the mixture. Mix well.
  7. Stir in feta cheese and lemon juice; season as needed.
  8. Serve garnished with fresh parsley.
