  • 14 oz cooked shredded chicken
  • 2 green onions, thinly sliced
  • 2 oz plain yogurt
  • 4 oz mayonnaise
  • 1.5 tsp Dijon mustard
  • 1/2 carrot, finely grated
  • 1.5 oz spinach, roughly chopped
  • 1 oz tomatoes, diced
  • 1 celery stalk, finely diced
  • Zest and juice of 1/2 lemon
  • 1 oz Parmesan cheese, finely grated
  • Pinch of black pepper
  • 1/2 tsp dried dill
  • 6 tortillas (flour or whole wheat)

Instructions

  1. Prepare all ingredients by shredding the chicken and chopping the vegetables.
  2. In a large mixing bowl, combine shredded chicken, yogurt, mayonnaise, Dijon mustard, grated carrot, spinach, diced tomatoes, celery, lemon zest and juice, Parmesan cheese, black pepper, and dill. Mix until evenly coated.
  3. Lay out each tortilla on a clean surface. Spoon an equal amount of chicken salad filling onto each tortilla.
  4. Fold in the sides of the tortilla and roll tightly from one end to another.
  5. Cut each wrap in half diagonally and serve immediately or pack for later.
