Ingredients
- 14 oz cooked shredded chicken
- 2 green onions, thinly sliced
- 2 oz plain yogurt
- 4 oz mayonnaise
- 1.5 tsp Dijon mustard
- 1/2 carrot, finely grated
- 1.5 oz spinach, roughly chopped
- 1 oz tomatoes, diced
- 1 celery stalk, finely diced
- Zest and juice of 1/2 lemon
- 1 oz Parmesan cheese, finely grated
- Pinch of black pepper
- 1/2 tsp dried dill
- 6 tortillas (flour or whole wheat)
Instructions
- Prepare all ingredients by shredding the chicken and chopping the vegetables.
- In a large mixing bowl, combine shredded chicken, yogurt, mayonnaise, Dijon mustard, grated carrot, spinach, diced tomatoes, celery, lemon zest and juice, Parmesan cheese, black pepper, and dill. Mix until evenly coated.
- Lay out each tortilla on a clean surface. Spoon an equal amount of chicken salad filling onto each tortilla.
- Fold in the sides of the tortilla and roll tightly from one end to another.
- Cut each wrap in half diagonally and serve immediately or pack for later.
