  • 14 ounces smoked sausage, sliced
  • 2 large sweet potatoes, peeled and chopped into 1-inch cubes
  • 1 large head broccoli, cut into bite-sized florets
  • 1 tablespoon olive oil
  • ¼ cup honey
  • ¼ cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon apple cider vinegar

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss sweet potatoes with olive oil, salt, and pepper. Spread evenly on the baking sheet.
  3. Roast sweet potatoes for 15 minutes.
  4. Meanwhile, in a small saucepan over medium heat, combine honey, soy sauce, garlic, and vinegar. Simmer and whisk in cornstarch slurry until thickened.
  5. Add sausage and broccoli to the baking sheet after 15 minutes; drizzle half of the honey garlic sauce over everything.
  6. Roast for another 15–20 minutes until sweet potatoes are tender.
  7. Drizzle remaining sauce before serving.
