  • 2 large boneless, skinless chicken breasts (about 1 lb / 450g)
  • 8 oz (225g) pasta (penne or fusilli recommended)
  • 3 tablespoons honey
  • 2 teaspoons freshly cracked black pepper
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente (9-11 minutes). Drain and reserve ½ cup of pasta water.
  2. Slice chicken breasts into thin strips. In a skillet, heat olive oil over medium-high heat and cook chicken seasoned with salt for about 4-5 minutes per side until golden brown. Remove from skillet.
  3. Reduce heat to medium; sauté minced garlic in the same skillet for about 1 minute. Stir in honey, black pepper, and optional red pepper flakes; let bubble for one minute.
  4. Return chicken to skillet; toss with sauce. Add drained pasta and reserved pasta water as needed to loosen sauce; mix until well combined.
  5. Serve immediately garnished with chopped parsley.
