Ingredients

  • 3 ½ cups bread flour
  • 1 teaspoon instant dry yeast
  • 1 ½ teaspoons salt
  • 1 ½ cups warm water
  • 2 tablespoons olive oil
  • 1 (28 ounce) can crushed tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ¼ teaspoon red pepper flakes (optional)
  • 8 ounces low-moisture mozzarella cheese, shredded
  • 4 ounces provolone cheese, shredded (optional)
  • 4 ounces pepperoni slices
  • ¼ cup hot honey
  • ½ cup honey for hot honey
  • 12 tablespoons red pepper flakes for hot honey
  • 1 tablespoon chili oil for hot honey (optional)
  • 1 tablespoon vinegar for hot honey

Instructions

  1. In a large bowl, combine bread flour, yeast, and salt.
  2. Gradually mix in warm water and olive oil until a shaggy dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth.
  4. Let the dough rise in an oiled bowl for 1–1.5 hours until doubled.
  5. Punch down the dough, divide it into two portions, and optionally let them rise again for added flavor.
  6. Sauté garlic in olive oil, add crushed tomatoes and seasonings, then simmer for about 20 minutes to prepare the sauce.
  7. Make the hot honey by heating honey with red pepper flakes and vinegar.
  8. Preheat your oven to 500°F (260°C) with a baking stone inside.
  9. Shape the dough into circles, top with sauce, cheese, pepperoni, and bake for about 8–12 minutes.
  10. Drizzle with hot honey before serving.
