Instructions

  1. In a large pot over medium heat, melt the butter with olive oil. Add the onion, celery, carrot, and garlic; sauté until softened (5–7 minutes).
  2. Sprinkle flour over vegetables and stir to combine; cook for about 1 minute.
  3. Gradually add seafood stock or chicken broth while stirring to prevent lumps; bring to a simmer.
  4. Add half-and-half or heavy cream; heat through without boiling.
  5. Stir in Old Bay seasoning, paprika, salt, and black pepper; simmer for another 5 minutes.
  6. Gently fold in lump crab meat; warm through for about 3–5 minutes.
  7. Serve garnished with fresh parsley and lemon wedges.
