  • 1 cup cottage cheese (room temperature)
  • 1 cup milk
  • 1 cup cheddar cheese (shredded)
  • 2 cups fresh spinach (chopped)
  • 1 small onion (finely chopped)
  • 4 large eggs
  • Seasonings: garlic powder, salt, pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a sauté pan over medium heat, cook the chopped onion until softened (about 5 minutes). Optionally add minced garlic.
  3. In a large mixing bowl, combine cottage cheese, sautéed onions, chopped spinach, eggs, garlic powder, salt, pepper, and half of the cheddar cheese. Mix well.
  4. Spray a nonstick baking dish with cooking spray and pour in the mixture. Top with remaining cheddar cheese.
  5. Bake in the preheated oven for 30-35 minutes until golden brown on top and set in the center.
  6. Allow to cool slightly before slicing and serving.
