- Remove excess grease from the skillet, then sauté chopped shallots and bell peppers until tender.
- Stir in Jamaican curry powder and coconut milk; bring to a boil.
- Add the meatballs back to the skillet, cover, and simmer for 20–25 minutes or until cooked through.
